Fae (and therefore faeries) have a HUGE history behind them including ties into the stories of King Arthur, Merlin and Avalon. Fae existed in many forms, some as tall as normal humans, others related to their elements or envirnments in nature and came in many types (such as the redcaps who were notorious eaters of human flesh, wearing the faces or scalps of their last victims as caps, hence the name). Typically they existed as a Winter and Summer court, the two courts ruling either Spring and Summer or Autumn and Winter with the former normally being good, though sometimes pranksters, and the latter being evil and tricksters.

Fairies were essentially made up by disney lol :P

Different spellings, mostly! Fairy is the "modern" spelling, Faerie is more archaic. There isn't much difference beyond that (I use them interchangeably, myself) but some prefer to use "fairy" to describe the modern tellings - characters along the lines of Tinkerbell, happy little pixies - and "faerie" for the older mythology, where the fae-folk are just as often portrayed as dangerous and even evil creatures at times.

I figured that was the case! ;P Yeah, I personally use "faerie" because I prefer the older spelling, it sounds more fantastical and poetic. No real reason otherwise.
